Don't let this long name scare you away....this pretty simple, super tasty onion ring recipe is sure to add pizzazz to any meal needing a savory sidekick.

*Chefs Tip* - Don't let the oil get too hot (where it splatters everywhere) a nice steady bubble is what you want to maintain.
Ingredients:
2 medium/large size yellow onions
1 1/2 cups cornstartch
1 1/2 Tablespoons Black Pepper
1 Tablespoon Salt
1 1/2 Heaping teaspoons southwest chipotle seasoning or 1 teaspoon chipotle powder
1 1/2 Heaping teaspoons paprika
1 1/2 Heaping teaspoons curry powder
3/4 Cup unsweetened vanilla almond milk
First, chop onions into 1/2 - 1 inch thick rings.
Try not to get to broken up about it if the rings aren't perfect....they will still be tasty :-)
In medium sized bowl mix all dry ingredients.
Add almond milk and mix. The consistency should resemble a thin pancake batter.
Heat Canola Oil. As oil is heating start dipping the rings.
Put coated rings into hot oil. The oil should roll at a nice steady boil, if its splattering like crazy it is probably a bit to hot.
Cook until golden brown about 3-6 minutes - turning rings for even color.
Keep repeating the process until all rings are fried and ready to be eaten.
Enjoy hot off the fryer or if you can resist...let them cool to room temperature. Also, feel free to enjoy with a side of Jenneka's famous super easy Aioli.
