Strawberry Lemonade Jello

Ahhh Jello! Wiggly, refreshing and the perfect afternoon cooking activity for a recent "niece day"! This recipe is wildly simple with only four ingredients and has an abundance of fresh summer flavor.


Difficulty Meter: Easy


Serves: 8-10


Prep Time : 15-20 mins Cool Time: 2-3 Hours


Cooking Tools:

Small Pot

9x13 inch pan

citrus zester or cheese grater

bowl or measuring pitcher to mix ingredients (you can also use the pan to mix in);-)


Ingredients:

1 box unflavored gelatin (4 - 0.25oz packets)

4 cups strawberry lemonade

4-6 medium sized fresh strawberries

zest of 1 lemon

Once you've grabbed your pots and pans...

Give your juice a quick shake...


ree

Reserve 1 cup and place in bowl or pan.

Pour remaining 3 cups into small pot and bring to a boil.

While you are waiting for your lemonade to boil...grab those gelatin envelopes and add them to the reserved cup of juice.

After gelatin is added to the mix stir and add in hot liquid.

Mix thoroughly.

While lemonade is cooling.... zest lemon and slice strawberries. Pour Lemonade/Gelatin mix into pan.

Sometimes you just have to taste test to make sure all the strawberries are good :-)

Pour zest and strawberries into pan. Give it a nice stir.

Place pan in refrigerator for 2-3 hours to let things set. Meanwhile, we enjoyed using the sofa as a gymnasium, played outside and watered the garden...

Watering the garden also doubled as an outdoor shower and laundromat....hence the outfit change:-)

When all is set and cooled...slice into cubes and serve on your favorite dish.
