Gluten Free Dirty Blonde Banana Bars


Have you ever had a recipe idea in your head and the first time you tried, it completely failed! So was the case with these babies. Jen had dreamed of a gluten free (not because it had to be...But rather just because she thought it would be an interesting experiment) sweet and salty banana bar and originally got a mostly salty...yet, texturally delightful treat. After trial and error...we bring you our Recipe for : Gluten Free Dirty Blonde Banana Bars. Trust us they are irresistible!

Difficulty Meter: Easy

Prep Time: 15 minutes  Cook Time: 35 minutes

Makes 12-15 bars

Ingredients:

1 Stick salted melted butter + a bit more to grease the pan 

3 over ripe bananas

1/2 cup organic cane sugar

2 eggs

1 Teaspoon Vanilla Extract

1/2 Teaspoon Baking Powder

1 Heaping Teaspoon Cinnamon

1/2 Cup Peanut Butter

1  1/2 Cups Rolled Oats + about 2 Tablespoons to sprinkle on top

1  1/2 Cups Chocolate Chips (reserve about half cup for top)

1/2 Cup Butterscotch Chips

2 Cups Oat Flour

2 Teaspoons Coarse Sea Salt for top of bars

Pre - Heat oven to 350* F


Peel and mash bananas....B-A-N-A-N-A-S! Cue back round music...we just had to 🙂 


In separate bowl melt butter, as the butter melts whisk in the eggs. Add Butter and give it a whirl.


Combine vanilla extract then scoop in the peanut butter and beat into a smooth even mixture.

*Chef's Tip: We like to use a fresh ground all natural peanut butter with no salt or oils added.


After all wet ingredients are incorporated, stir in the sugar, chocolate and butterscotch chips. Blend well, then mix in baking powder, oats and oat flour.


When all ingredients are mixed thoroughly, pour into buttered 8 x 11 x 2 inch pan.

Sprinkle reserved oats and chocolate chips on the top of the batter.

Bake in the oven for 35 minutes.


As bars are cooling spread coarse sea salt over the top.


Sit back, relax and enjoy this decadent delight. Extra soothing with a cuppa tea (we really love how Harney & Sons Paris Tea pairs with these Dirty Blonde Banana Bars) although Milk and/or coffee are just as yummy.
