We love a good Kale Salad and this past year we spent a bit of time working on perfecting our recipe😁 Let’s just day out of the many variations...this has always been the base!
Easy and delicious the secret is in the roasted garlic dressing! Grab your salad bowls and get ready for the goodness! Difficulty Meter: Very Easy
*Chefs Tip* - This salad makes a great next day lunch! Add your choice of extra protein and you have a full meal.
1 lb chopped Kale
1 1/2 cups dried cranberries
1 1/2 cups shaved Parmesan
1 cup chopped walnuts
For the dressing:
3/4 - 1 cup olive oil
1 head garlic (sliced into slivers)
zest of 2 limes
juice of 2 limes
3 tablespoons agave syrup (you can substitute honey)
2 tablespoons basalmic vinegar
1 teaspoon salt
1 teaspoon pepper
2 teaspoons each garlic and onion powder (optional)
Get your “Wolverine” claw salad tossers and a nice large mixing bowl cuz bub you definitely didn’t pick the wrong kale salad recipe 😁
First, put kale into large mixing bowl.
Next, to make dressing, heat oil on high heat. Add garlic and turn heat down to medium. Cook until edges turn golden. Turn off heat, but keep on burner.
Add lime zest, lime juice, agave, balsamic, salt, pepper and optional spices. Combine dressing with kale. Add cranberries, nuts and cheese.
Toss and combine until everything is evenly coated and distributed.
Plate and enjoy...or eat right from the bowl😂!
