Serves: 6-8 (as good sized dinner portions).
4-6 lbs ground beef
2-15.5 oz cans kidney beans
1-medium onion (diced)
2-3 tablespoons extra virgin olive oil
2-16oz jars salsa

To serve on the side:
(Sour Cream, Shredded Cheese, pickled Jalapeños, scallions and tortilla chips)
In large pot (our favorite is a 7-9 qt Dutch oven) heat olive oil and lightly sauté diced onions.
Add ground beef and break up into chunks sauté for about 5-7 minutes until mostly cooked through. Add beans, salsa and spices. Stir well. Cover and cook for another 10-15 minutes or until bubbly and hot!
Serve with sides or enjoy as a stand alone!
